  • To cook the rice we need:
  • 1 cup Long GrainBasmati Rice/பாஸ்மதி அரிசி
  • 1.5 cup water/தண்ணீர்
  • 2-3 Cloves/கிராம்பு
  • 1 inch Cinnamon/இலவங்கப்பட்டை
  • 2 cardamom/ஏலக்காய்
  • 2 Bay Leaves/பே இலைகள்
  • 1 tsp salt/உப்பு
  • To make Carrot rice we need:
  • 1 tbsp oil/எண்ணெய்
  • 1 tsp cumin seeds/சீரகம்
  • 2-3 Cloves/கிராம்பு
  • 1 inch Cinnamon/இலவங்கப்பட்டை
  • 1 cup Onion finely chopped/வெங்காயம்
  • 2 tsp Garlic finely chopped/பூண்டு
  • 2-3 Green Chilli Slit into half/பச்சை மிளகாய்
  • 1-inch fresh raw turmeric grated/பச்சை மஞ்சள்
  • 2 medium-sized fresh carrots grated/கேரட்
  • 1 tbsp ghee/நெய்
  • Coriander leaves for garnish/கொத்தமல்லி
  • 1 tsp salt/உப்பு
  1. Rinse rice until water turns clear. Soak the rice for 15 mins and then transfer to a pressure cooker/electric cooker with 1.5 cups of water.
  2. Cook for 2 to 3 whistles if pressure cooker. You can also cook in your Instant pot, high pressure for 5 minutes with natural pressure release. Once the rice is cooked, fluff it with a fork and transfer to a large bowl and let it cool down.
  3. Heat oil/ghee in a pan, add the cumin seeds, cinnamon & cloves. Let the cumin seeds to splutter & then add finely chopped garlic, green chili, onion, saute well till onion turns light brown, add grated fresh raw turmeric, grated carrots, salt & saute everything well.
  4. Add the Cooked rice and ghee mix well with the rice without breaking the rice.
  5. Finally, garnish with coriander leaves and serve hot.
Use long grain Basmati rice to make this carrot rice recipe, the fragrance will be amazing. I have used India Gate Basmati Rice to make this carrot rice.
To get Perfect Yellow Colour Carrot rice to use the fresh raw turmeric, if not Turmeric powder.
After the rice is cooked, let it rest for at least 5 minutes before fluffing it with a fork. It will make sure the grains do not break while fluffing it.
Ghee adds a very delicious flavor to the rice, so do not skip it.
Slightly crushing the whole spices before adding them, will make the flavor stand out even more.
To make a variation of this carrot rice recipe, you can add grated beetroot. It will impart a very different flavor to the rice.
