TamilNadu style Murungai Keerai soup recipe aka Moringa soup aka Drumstick leaves soup recipe with shallots(Chinna Vengayam), Pureed Tomatoes and Home grew Fresh Murungai Keerai.

  • A handful of drumstick leaves/முருங்கை இலை
  • 1 tbsp butter/வெண்ணெய்
  • ½ tsp jeera(cumin seeds)/ஜீரா
  • ⅓ cup pureed tomatoes or 1 chopped tomatoes/தக்காளி
  • 6 shallots thinly sliced/வெங்காயங்கள்
  • 2 cups of water/தண்ணீர்
  • A generous pinch of Pepper Powder/மிளகு தூள்
  • salt to taste/உப்பு
  1. Heat butter in a pan & add Cumin Seeds, Let it Splutter. Add thinly sliced shallots(Chinna Vengayam) and slit green chilies, saute till the onion turns golden. Add-in finely chopped Tomatoes(i have added pureed tomatoes) since my tomatoes are not much ripening., saute till it turns soft and mushy.
  2. Add the washed and cleaned Murungai Keerai, saute well. Add salt, freshly crushed black Pepper or Pepper Powder.
  3. Add 2 cups of water, let it boil. Cover and cook for 5 mins so that the Murungai Keerai will become soft and cook well. Healthy and yummy Murungai Keerai Soup is ready to serve.
Add butter and saute the shallots in butter, is very important because the butter will always enhance the taste of all the soup recipes.
I skip adding chopped garlic will sauteeing with butter because my little one does n't like the garlic taste. Please do add garlic in your soup is really good for health.
I have ground the tomatoes pureed and added to the soup, it reduces the cooking time and enhances the taste of soup try this way or simply add the ripen tomatoes but make sure that you need to cook the tomatoes till it turns soft and mushy.
