  • 1 branch of romaine lettuce
  • 2 medium, fresh cucumbers
  • 2 medium tomatoes
  • 5-6 strings of scallion, or 1 small onion
  • 2-3 tbs chopped coriander
  • 1-2 tbs finely chopped fresh mint
  • Dressing
  • 1 small lemon
  • ¼ cup olive oil
  • ½ tsp ground black pepper
  • 1 tsp salt
  • 1-2 Tsp mustard
  1. To make the pita chips. Cut the bread into bite-size diamond, square or rectangle pieces. Drizzle with olive oil and salt, toss. Toast in the preheated nonstick skillet or 375°F oven, until golden color.Set aside to cool down
  2. take lettuce, cucumber, shallots, olives, tomatoes add everything in a bowl.
  3. make the dressing, take olive oil, mustard, lime juice, salt, and pepper. Mix everything well and add it to the salad.
  4. Give a toss
  5. finally, add the pita chips and serve.
