Garlic Pickle made with Garlic and Tomato

  • 1& ½ Cup Garlic Cloves(peeled)
  • 1 cup finely chopped tomatoes
  • 1&1/2 tsp Mustard seeds( roasted)
  • 1 tsp Fenugreek seeds( roasted)
  • 10 Dry Red Chillies (roasted)
  • 1-1/2 tsp Salt
  • 1 tsp crushed jaggery
  • 1 tsp Turmeric Powder
  • ⅓ cup Gingelly Oil
  • ¼ tsp Hing Powder
  1. Dry roast the dry red chili, mustard seeds and methi seeds(Vendhayam). Make sure that it should not burn. Powder it and keep aside.
  2. Heat oil in a pan and add ½ cup peeled garlic cloves and saute well.
  3. Add the chopped tomatoes and saute along with the garlic cook well till the tomatoes become soft and mushy.
  4. Once the tomatoes and garlic become soft drain the oil, cool down completely and grind it to a smooth paste.
  5. Now heat the same pan temper with mustard seeds, once mustard seeds splutter add hing, and remaining garlic and saute well.
  6. Add the grounded tomato-garlic paste, pickle powder, turmeric powder and salt, mix well.
  7. cover and cook well, till the oil oozes and finally add the crushed jaggery, saute and remove it from the stove.
  8. Garlic Tomato pickle is ready to serve.
