Kothavarangai (cluster beans) Paruppu Usili, Easy Iyengar Style Easy Paruppu Usili under 20 mins. Kothavarangai paruppu usili is very easy to make and it is going well with Mor Kuzhambu or any Vatha Kuzhambu. Paruppu usili is nothing but, protein-rich dal is soaked, ground and then steamed, crumbled and then added to vegetables. The vegetable option is completely based on our wish it may be cabbage, beans, beets, or any of our favorite vegetables. But the basic Usili Preparation is the same. Some Iyengar Style Paruppu Usili recipes like Capsicum(bell pepper) Paruppu Usili, beans Paruppu usili, Asparagus Paruppu Usili. These Paruppu Usili are very healthy and it is good to take in our healthy meals.

This is one pot one shot paruppu usili just steam both dal mix and vegetables, and then Tadka that’s it Paruppu usili ready, very simple right let’s check the recipe.

Kothavarangai (cluster beans) Paruppu Usili, Easy Iyengar Style Easy Paruppu Usili under 20 mins.

Ingredients
  • 300g kothavarangai/cluster beans
  • ⅓ cup chana dal
  • ⅓ cup toor dal
  • 2 dried red chilies
  • ½ tsp salt,
  • ⅓ tsp turmeric,
  • a pinch asafoetida.
  • For tempering
  • 1 tbsp coconut oil
  • 1 tsp mustard seed
Instructions
  1. soak equal parts of chana dal and toor dal (⅓ cup each) + 2 dried red chilies, for 1 hour. Drain the water completely and then pulse it with ½ tsp salt, ⅓ tsp turmeric, and a pinch asafoetida. Don't grind it a fine paste, just give one or 2 pulses we need a coarse paste. chop the cluster beans and spread them on another palate.
  2. Transfer the dal mix to a greased plate or vazhai ilai and steam both dal & kothavarangai for 15 mins. Remove and cool down completely, add steamed dal to mixie or processor, and pulse it. Again don't grind it smooth just pulse it. The texture should be seen in the above picture.
  3. Meanwhile in a pan, tempered coconut oil with mustard, curry leaves. Add steamed cluster beans, salt, and dal, mix well. Sauteed and kept in low flame for a minute. Lastly drizzled a few drops of coconut oil. switch off the stove. Kothavarangai Paruppu usili ready!!!
  4. Serve Paruppu usili with any kuzhambu or simply with rasam too.

Step by step Kothavarangai Paruppu Usili recipe, How to make Cluster beans Paruppu Usili recipe:

Kothavarangai Cluster beans Paruppu Usili recipe
