Chettinad Special Cauliflower Rasam/Cauliflower Soup with Kathirikai Masala. Simple South Indian Lunch Recipe made under 30 mins. Chettinad Cauliflower rasam recipe is similar to Mushroom Rasam, Quick and easy recipe, no grinding process. Flavorful Cauliflower Rasam goes well with rice or we can have it as a soup too. Chettinad Cauliflower Rasam gets its flavor from the freshly ground spices (black pepper, cumin powder), which makes this dish just irresistible. Traditionally it is made using Indian shallots apart from a few other basic ingredients.

Ingredients
  • 1 tsp oil
  • 2-inch cinnamon
  • 2 cloves
  • 5 shallots, finely chopped
  • 1 medium-sized tomato
  • 1 tsp ginger garlic paste
  • 2 green chilies
  • 250g cauliflower flowers
  • ¼ tsp turmeric powder
  • 1 tsp salt
  • 1 small lemon size tamarind extract 1 cup of water
  • 1 cup of water
  • coriander leaves for garnishing
Instructions
  1. Heat oil in a Kadai, add cinnamon stick and cloves. Once they crackle, add chopped shallots or onion, curry leaves, ginger-garlic paste, chopped tomato, and green chilies.
  2. Fry them in oil, till the onion and tomato become soft.
  3. Add cauliflower, cover and cook for 5 mins, let the cauliflower cook.
  4. Add the tamarind water, turmeric powder, salt, freshly ground pepper & cumin powder. Mix well. Let them boil for 3 to 4 mins, once the rasam started to foams on top, switch off the stove.
  5. Don't boil the rasam after it starts foaming. Finally, add the Coriander Leaves and switch off the stove.

  • 2 tbsp oil
  • 2 cinnamon stick
  • 2 cardamom
  • 2 cloves
  • 1 medium-sized onion chopped
  • 2 tomatoes pureed or finely chopped
  • curry leaves
  • 250 g brinjal sliced
  • ¼ cup water
  • 1 tbsp chili powder
  • 2 tbsp coriander powder
  • 1 tsp garam masala
  • ¼ tsp turmeric powder
  • 1 tsp salt
Instructions
  1. Heat oil in a Kadai, add cinnamon stick, cardamom, cloves. Fry well. Add the chopped onion, curry leaves fry well. Add chopped tomatoes or Tomato Puree, coriander powder, chili powder, garam masala salt. Add the 300 g of sliced brinjal, fry well.
  2. Add ¼ cup of water, cover, and cook for 15 mins or till brinjal becomes soft. Adjust the water level, if you want the gravy to add a little more water, if you want dry gravy let it open cook for 5 more mins, it will turn thick gravy. Kathirikai Masala is ready to serve. This masala goes well with sambar, rasam, Rotis as well.

Spicy Ennai Kathirikai Masala Recipe, Step by step Procedure:

Ennai Kathirikai Masala

Heat oil in a Kadai, add cinnamon stick, cardamom, cloves. Fry well. Add the chopped onion, curry leaves fry well. Add chopped tomatoes or Tomato Puree, coriander powder, chili powder, garam masala salt. Add the 300 g of sliced brinjal, fry well.

Kathirikai Masala

Add 1/4 cup of water, cover, and cook for 15 mins or till brinjal becomes soft. Adjust the water level, if you want the gravy to add a little more water, if you want dry gravy let it open cook for 5 more mins, it will turn thick gravy. Kathirikai Masala is ready to serve. This masala goes well with sambar, rasam, Rotis as well.
