Spicy Kurma

      One of the most favourite side dish with briyani is Veg Kurma.This kurma taste awesome and quite spicy.My daughter will not eat spicy briyani. So i always make it less spicy.To compensated it, i will make the  spicy side dish.This kurma goes well with Paratha and Idiyappam also.If you want less spicy Kurma Please check here.



Ingredients:


1/2 cauliflower break the florets into small pieces
1/2 carrot cut into small pieces
3 beans cut into small pieces
1 potato cut into small pieces
1/4 cup green peas
1 onion chopped
1 tomato chopped
2-3 green chillies
1 inch cinnamon stick
3-4 cloves
1 tbsp ginger garlic paste
1/2 tsp chilly powder
1 tsp coriander powder
1/4 tsp turmeric powder
1/2 cup soya chunks, soaked 
1 tbsp oil
salt to taste

To Grind:

1 cup grated coconut
1/2 tsp fennel seeds
5 cashew nuts/1 tbsp Roasted gram dal


Method of Preparation:


Heat the oil in a kadai,add cinnamon stick and cloves.Once it started cracking add onion,chilly and tomatoes and fry them for few minutes.If you don’t want more spicy you can skip chilli here.Add the vegetables in the kadai.Cover and cook for few minutes/till the vegetables become soft.


Once the veggies are cooked well,add salt,turmeric powder,chilly powder and coriander powder. 

Grind the Roasted gram dal/cashew nuts,coconut and fennal seeds into a fine paste with enough water.


Finally add the Coconut paste and soaked soya chunk into it.If you want thin gravy you can add a cup of water at this stage and let it cook for few minutes.


Once the gravy becomes semi thick,you can remove it from the stove Or if you want thick gravy you can cook if for few more minutes and then remove it .



 Transfer it into a serving bowl.


Here is our Spicy Veg kurma is ready and i served with Veg briyani and gobi fry.
