Kuskha and Veg Chalna

I had Kuskha and Vegetarian Chalna,at my friend’s place. I didn’t knew chalna can be prepared vegetarian until my friend told me all about it and that it’s Trinelvelli special.Usually Chalna can be served with parotta/kuskha/briyani.Since I liked it very much, I quickly got the recipe from my friend and made it, so here am sharing with you all Kuskha and Vegetarian Chalna recipe …

Ingredients For Chalna:

1/2 cup Toor Dal
1/4 cup Channa Dal
1 tsp Oil
1 inch Cinnamon Stick
2 Cloves
1 Cardamom
1/2 Bay Leaves
1 Onion Chopped
1 Tomato Chopped
2 Green chilly
1/2 tsp Ginger Garlic Paste
1/4 tsp Turmeric Powder
2 Purple color Brinjals cut into medium sized pieces
1 Raw Mango cut into medium sized pieces
2 Potato
1 tsp Red chilly Powder
2 tsp Coriander Powder
1/4 cup Tamarind Extract
1/4 tsp Jeera Powder
1/3 tsp fennel powder
1/4 tsp pepper powder
1 sprig Curry Leaves
Few Chopped Coriander for Garnishing
Salt as needed

Method:



Pressure cook both the dals and Potato with enough water.Once done Peel the skin of the potato and cut into medium sized pieces,make them ready.

Heat the Oil and then add the cinnamon,cardamom ,cloves and bay leaves.Let it cackle.Saute the Onion,Tomato,Green Chilly and Curry leaves for a while.

And then add the ginger garlic paste,turmeric powder,chilly powder,coriander powder and salt.Let it cook for sometime till the raw smell goes.Add Brinjal and saute it.

Add the cooked dal and tamarind extract cover and cook for a while.If the curry is too thick add 1/2 cup water otherwise no need.Once the brinjal cooked well,add the Raw mango at last otherwise it will dissolve in the curry.Finally add the jeera powder,fennel powder and pepper powder .It gives more flavor,if u add them at the final stage.

Once all done take out the mango outside otherwise the  curry  become too sour.Garnish it with coriander leaves and serve it with Paratha/any kinds of briyani/dosa.

Lets see the Recipe For Kuskha.

Ingredients for Kuskha:

2 cups Basmati Rice
3 and 1/2 cups water
1 cup curd
1 Onion sliced
1 Tomato diced
2 Green Chilly split into two
1 tsp Ginger Garlic Paste
1 inch Cinnamon
2-3 Cloves
1-2 Cardamom
1 Bay leaves
2 tbsp Ghee/Oil
Salt as needed
Few Coriander Leaves for Garnishing

Method:


  • Heat the Ghee/Oil in a Pan and add the cinnamon,cloves,cardamom,bay leaves.Let them crackle.Then add the Onion,Tomato and Green chilly .Saute them well.

  • Add ginger garlic paste and salt. let it cook for sometime,till the raw smell goes.Add Curd into it.Once you add the curd don’t cook it for long time.

  • Add the rice and mix well with the gravy.Transfer the rice to the electric cooker.

  • Add water and then cook the rice.

  • Once done.Garnish it with Coriander leaves and serve hot.

    i have tasted the vegetarian version of kushka in my neighbours place when i was a kid. This chalna i never tasted anywhere and dont even the ingredients.Nice explanatory pictures and good combo too
