Tomato Prune Jam

July 11, 2010 by Premalatha Aravindhan 28 Comments

Tomato Prune Jam:

Ingredients:

3 tomatoes
6 pitted prunes
2 cloves
2 cardamon
2  tsp ghee
5 cashewnuts
1/2 cup water
200g sugar

Method:

Take 3 tomatoes and wash them.

Put them in a microwave safe bowl.Add 1/2 cup of water into it and cook for 2 mins in microwave high.

Take out the bowl from the oven and check whether it cooked well or not.If not cook  it for another 1 min.

Peel the tomato skin and smash it.

                                                              Take 6 pitted prunes

Slice the prunes into small pieces

Heat the ghee, fry the cloves, cardamom and cashewnuts in the ghee

Add the tomato puree, prune and sugar

Once it becomes thick and started bubling at the top, switch off the stove.

I didn’t add any food colour, but luks very colourfull because of  the tomato and the prune fruit.

Yummy Tomato Prune Jam is ready to serve now.We can have this with vegtable briyani rice/rotis/bread…
