Papaya and Carrot Creamy soup

Papaya and Carrot Creamy Soup:


Ingredients:

2 tsp Olive oil

1/4 Papaya Peeled and finely chopped

1 garlic clove, Peeled and minced

3 large carrots,Peeled and thinly sliced

1/2 tsp ground cinnamon

2 tsp coconut cream milk

Salt and Pepper to taste.

Method:

Heat the oil in a large saucepan over medium heat.Add the onion and garlic and cook 2 to 3 min,stirring often, until mixture softens.Add the Papaya and carrot and saute for 2 more min.Reduce the heat to low and cook at a simmer for about 8 min until the carrot and papaya are tender.

Tranfer the mixture to a blender and puree until smooth.Return to saucepan,add coconut cream milk,ground cinnamon,salt and pepper,stir well to combine, and cook at a low simmer for 3 to 4 min.Serve immediately.
