Okra Fry(ladies finger fry)

Okra Fry (Ladies finger fry)
Ingredients:
450g okra
2 tbsp oil

1/2 tsp Mustard seeds
1 onion finely chopped
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp chilli powder(optional)
1/4 tsp ground turmeric
150g chopped tomatoes
Method:
Wash the okra and pat dry with paper towel.
Trim the ends and cut into pieces as u desired.ignore any sticky appears because it will disappears as the okra cooks

Heat the oil in a deep,heavy-based frying pan over medium heat , add the mustard seeds and fry the onion until lightly browned.Add the spices and tomato and fry 1 min until well mixed,squashing the tomato to break it up.

Add the okra and stir until well coated.Bring to boil,cover and simmer for 5-8 min,
until the okra is cooked through and no longer slimy.If there is any excess liquid,simmer,uncoverd,until the liquid evaporates.Season with salt,to taste.

    love to have it with hot rasam rice.never tried ladysfinger with onions and tomatoes
