Vegetable Briyani

Ingredients:
 Rice 2 cups

Water 3 1/2 cups
Cinnamon sticks 1 small
Cloves 2
Cardamon 2

Oil 4 tsp
Onion 2 chopped
Tomatoes 2 chopped
Green chillies 3
Mixed vegetables(Been,carrot,Green peas)
Ginger Garlic paste 2 tsp
Coconut milk 1/2 cup
Chilli powder 1 tsp
Turmeric powder 1/4 tsp
Garam masala powder 1/2 tsp
Salt to taste

Method of Preparation:
Heat oil in the kadai ,add cinnamon sticks, cardamon and cloves.Once it started crackle,
Add onion,tomatoes,chilly, ginger garlic paste.
Let it cook for 5 mins then add the vegetables and Chilly powder,turmeric powder,garam masala powder and salt.

Cover with lid and cook for 2 min.After few mins transfer it into rice cooker.
Add coconut milk and water.
Finely add the rice and cook it.
Once rice is completely cooked then garnish it with mint leaves.
If u want the Biryani to be colourfull you can add food colour on the top at the final stage.

Vegetable briyani is ready to serve with any raita.
