Punugulu Recipe(இட்லி மாவு போண்டா) using leftover idli batter & Coconut Peanut Chutney

Crispy Punugulu or Paniyaram or Punukkulu is a portion of street food from Andhra and is made with idli dosa batter. Paniyaram is a popular Chettinad tiffin item in South India, We make it as a snack or for Breakfast. Andhra Punugulu(we call Idli Maavu Bonda in Tamil Nadu) is a simple and easy snack prepared with the leftover idli batter by adding maida or Rava. It tastes similar to Goli Baje. But this is Instant Version. You no longer need to wait for hours to ferment or overnight. We can make it immediately if we have idli batter handi. What is Punugulu?

Andhra Punugulu is a simple and easy Homemade snack prepared with the leftover idli batter by adding maida or Rava. Hotel Style Punugulu Recipe calls for Quick and Instant Version by adding Maida, but some they prepare it with Rava, which needs little resting time.

I called Amma Yesterday while she was making the Idli maavu bonda, and she told me she is missing me. Because it’s my favorite snack, if she makes this at home unlimited bonda will go inside. These days I do not make them often. After I got tempted by Amma, I made a small batch and enjoyed it with the Ginger Tea.

Punugulu Is tastes amazing with Coconut Chutney or Kara Chutney. I made Punugulu with Peanut Coconut Chutney. Here is the Step by Step Photos for the Punugulu recipe.

Ingredients required to Make Punugulu:

2 cup idli batter

1 tbsp Rava or maida

a pinch of salt, and a pinch of soda

1 onion, Finely Chopped

green chili, chopped

curry leaves,

½ tsp cumin seeds

Oil for Deep Frying

Step by Step Procedure for making Punugulu,

 Take 2 cups idli batter, add 1 tbsp Rava or maida, a pinch salt, and a pinch of soda mix well. If the batter is too thick add a tbsp of water. 

Add chopped onion, green chili, curry leaves, ½ tsp cumin seeds, mix well.

Mix the batter well.

Heat oil in medium flame, pinch the batter, and fry golden. 

Enjoy Punugulu with chutney!
