Thengai Paal Biryani is made with freshly extracted coconut milk(Thengai Paal). This is Coconut Milk Based Biryani and a very flavorful Biryani Variety. Unlike normal biryani, this coconut milk biryani is less spicy and less masala used. Made with Lots of healthy vegetables. Quick and easy one-pot meal, it can be made under 30 mins. Very simple and Easy Biryani Variety.

Easy Thengai Paal Biryani recipe using seeraga samba rice, How to make Veg Biryani with Coconut Milk using freshly extracted coconut milk

Ingredients
  • 2 cups of seeraga samba rice
  • ¼ cup thick coconut milk
  • 1 tbsp oil + 1 tbsp Ghee
  • 1-inch cinnamon,
  • 2 cloves,
  • 2 cardamom,
  • 1-star anise,
  • bay leaves
  • 2 sliced onion
  • 1 tsp ginger garlic paste
  • 2 chopped tomatoes
  • 2 green chilies
  • 250g vegetables of your choice
  • ⅓ tsp turmeric powder,
  • 1 tsp chili powder,
  • 1 tsp coriander powder,
  • 1&½ tsp salt
  • 3 & ½ cup water
  • coriander leaves
  • 1 tbsp ghee
Instructions
  1. Soak 2 cups of rice for 30 mins before cooking. Extract ¼ cup thick coconut milk, only first milk. Keep aside.
  2. Heat a Kadai or Pressure cooker with 1 tbsp oil + 1 tbsp Ghee add 1-inch cinnamon, 2 cloves, 2 cardamom, 1-star anise, bay leaves. Fry well
  3. Add 2 sliced onions and saute well, till it turns golden. Add 1 tsp ginger garlic paste, saute well.
  4. Add 2 chopped tomatoes, 2 green chilies saute well till it turns mushy. Add vegetables of your choice.
  5. Add ⅓ tsp turmeric powder, 1 tsp chili powder, 1 tsp coriander powder, 1&½ tsp salt, saute till raw smell goes off and oil separates(approximately 8 mins)
  6. Drain the water and add the soaked rice, saute for a min once the rice becomes a little crisp, add coconut milk & 3 & ½ cup water.
  7. Cover Pressure to cook it for 2 whistles and then switch off. If you are making it in Kadai, cover and cook in medium flame for the first 3 mins and then low in 4 mins or till the rice becomes soft. Switch off the stove. That’s it!!

Thengai Paal Biryani recipe Preparation Step: Soak 2 cups of Seeraga samba rice in water for 30 mins before cooking. Extract ¼  cup thick coconut milk, only first milk. Keep aside. You can use any vegetables of your choice, mushrooms, soya chunks, paneer, etc. I didn’t use any biryani powders, so I took the whole spices a little extra, if you are using biryani masala, reduce the whole spices.

Heat a Kadai or Pressure cooker with 1 tbsp oil + 1 tbsp Ghee add 1-inch cinnamon, 2 cloves, 2 cardamom, 1-star anise, bay leaves. Fry well

Add  2 sliced onions and saute well, till it turns golden. Add ginger-garlic paste, saute well.

Add 2 chopped tomatoes, 2 green chilies saute well till it turns mushy. Add vegetables of your choice.

Thengai Paal Biryani recipe making Step: 2 Add vegetables of your choice. Add ⅓ tsp turmeric powder, 1 tsp chili powder, 1 tsp coriander powder, 1&½ tsp salt, saute till raw smell goes off and oil separates(approximately 8 mins)

Drain the water and add the soaked rice, saute for a min.

Thengai Paal Biryani recipe making Step: 3 once the rice becomes a little crisp, add 1/4 cup of coconut milk and 3 & 1/2 cup water. Add few mint leaves. 

Cover Pressure to cook it for 2 whistles and then switch off. If you are making it in Kadai, cover and cook in medium flame for the first 3 mins and then low in 4 mins or till the rice becomes soft. Switch off the stove. That’s it!!

Thengai Paal Biryani recipe making Step: 4  Finally add a tbsp ghee to fluff up the rice, and garnish with coriander leaves, serve hot with raita.

Important Points to Remember:

  1. Don’t Soak the rice for more than 30 mins, rice will turn sticky. you can use basmati rice instead of jeera rice.
  2. For best flavor always use fresh coconut milk not coconut cream and use thick milk.
  3. adding 1 tbsp ghee at the last step makes the rice to fluffy and soft.
  4. water ratio is very important more water will make the rice sticky.
