Chettinad Mushroom gravy for rice, Mushroom Chettinad kulambu without coconut

Tamil style Authentic Mushroom Kulambu without coconut & Tamarind. This tasty Varutharacha Mushroom Kulambu was Prepared using freshly ground Whole Spices. The specialty of Chettinad recipes is the flavoring masala added aroma & tastes to the kulambu. This Varutharacha Mushroom Kulambu made without coconut is one more specialty that you can carry forward to the next day, and serve with suda suda ildi. That would be an excellent combo.

What is Chettinad Mushroom Kulambu(gravy)?  South Indian’s Most Flavourful Mushroom Chettinad is a rich and creamy masala made with freshly ground whole spices and an authentic preparation method without coconut. This is not Restaurant-style, but the same color, texture, and flavor, home-style recipe.

Story Behind Chettinad Mushroom Gravy🤦‍♀️✍🧿(flashback)

Wait I am not going to say any Historical story behind Chettinad mushroom. Just sharing a restaurant experience with you all. Me my sister’s family, amma, appa went to a restaurant that day is Amma’s Bday. We order some fried rice, nan and Chettinad Mushroom, plain rice. Akka is a person like out of South Indian dish she will not touch anything. After 30 mins waiting the dishes came, all hungry. Akka was expecting a spicy Chettinad dish that can pair with plain rice, at the end it came with creamy sweet. It tastes a little sweet because they have added cream. She asked why this is sweet to the server,  Chettinad dish should be spicy? He replied this not authentic preparation mam this is restaurant-style. Later she ordered dosai and ate. Why this story here? If you are expecting a restaurant-style sweet dish this is not the one. This is authentic mushroom Chettinad gravy. Thank you!!!

Homemade Chettinad Mushroom Masala:

Chettinad Mushroom masala ingredients

For Homemade Chettinad Masala Ingredients, 1 tbsp coriander seeds, 1 tsp cumin seeds, 1 tsp fennel seeds, 2-inch cinnamon sticks, 4 cloves, 2 cardamoms, 4 garlic cloves, 1-inch ginger, 4 dried red chilies(adjust according to ur spice level). 2 ripe tomatoes, 10 shallots, mint leaves.

Chettinad Mushroom gravy for rice, idli, dosa. Chettinad Mushroom kulambu recipe made with freshly ground whole spices

Ingredients
  • Chettinad Masala, To Roast and Grind
  • 1 tbsp coriander seeds,
  • 1 tsp cumin seeds,
  • 1 tsp fennel seeds,
  • 2-inch cinnamon sticks,
  • 4 cloves,
  • 2 cardamoms,
  • 4 garlic cloves,
  • 1-inch ginger,
  • 4 dried red chilies(adjust according to ur spice level).
  • 2 ripe tomatoes,
  • 10 shallots,
  • mint leaves.
  • Other Ingredients:
  • 2 tbsp oil,
  • 1-inch cinnamon,
  • 2 cloves,
  • 2 bay leaf
  • 1 onion chopped
  • 1 tsp salt,
  • ¼ tsp turmeric powder
  • 10 mushrooms
  • 2 drumstick
  • coriander leaves
Instructions
  1. Take 1 tbsp coriander seeds, 1 tsp cumin seeds, 1 tsp fennel seeds, 2-inch cinnamon sticks, 4 cloves, 2 cardamom, 4 garlic cloves, 1-inch ginger, 4 dried red chilies(adjust according to ur spice level). 2 ripe tomatoes, 10 shallots, mint leaves. Roast everything in oil and then grind it to a smooth paste.
  2. Heat a Kadai with 2 tbsp oil, add 1-inch cinnamon, 2 cloves, 2 bay leaf saute well. Add onion chopped, fry till golden. Add the freshly ground masala and saute well.
  3. Add 1 tsp salt, ¼ tsp turmeric powder, cover, and cook till the oil separates.
  4. Add vegetables, and ½ cup water until the vegetables become soft.
  5. Finally, garnish with Coriander leaves & serve hot.
Notes
cook the kulambu till the raw smell goes off, and oil separates at the top otherwise we will feel the masala smell.

Cooking  Instructions,

Give time to cook the gravy till the oil separates otherwise you will feel the raw smell. you can add any vegetables of your choice This gravy stays good for 2 days in the fridge. Moreover, it tastes amazing the next day!!
