Ulundhorai Recipe, Ulundu Sadam recipe, Spiced Urad dal Rice is a traditional Prasadam recipe made with Ulundu(urad dal). Got this Iyengar Ulundhorai recipe from my Mami(Aunty) and she shared the tips to make Perfect Ulundhorai Recipe similar to the temple style Ulundhorai recipe. I have shared the Iyengar Puliyodharai recipe video that is super hit among my family and friends. After that this Ulundhorai(Ulundu Sadam) is another hit.

This Traditional Ulundu Sadam is made of Spiced urad dal powder is cooked in milk and then that thick paste is added to the rice with a tsp of ghee. The entire rice is full of goodness, urad dal, ghee, milk..wow what else we need for a good healthy dish. This Ulundhorai can be made an offer to God on Puratassi Sani, Navratri, and all special occasions.

Let me share few tips to make perfect Ulundhorai recipe(Ulundu Sadam recipe),

  1. Roasting the urad dhal with ghee gives nice flavor to the rice so we should not skip ghee and roast the urad dal to golden brown not light brown or a burnt urad dal. both spoil the taste.
  2. Powder the roasted urad dal into a coarse powder, not fine powder(like how we powder for idli podi)
  3. Boil the Spiced Urad Powder in the milk and cook the mix in the low flame then only we will get the Urad dal paste if it high flame into lumps or the mix will get burn.
  4. Add a tsp of ghee while mixing the rice and also the rice should not be hot or sticky( we need uthri rice)

STEP BY STEP INSTRUCTIONS TO MAKE PERFECT ULUNDHORAI:

Ulundhorai Recipe step 1

STEP:1 First, we make the tempering for Ulundhorai. Heat ghee in a pan. Add red chili, curry leaves and give a stir. Then add cashews and fry till they are lightly golden and then transfer the tempering into a plate, keep aside. Tempering is ready.

STEP:2 LETS PREPARE THE URAD DAL SPICE powder MIX In the same pan to add urad dal, red chili, curry leaves, and coconut. Roast all the ingredients till the dal turns golden brown. You will get a nice aroma from the dal. Switch off the flame.

Cool the roasted ingredients, add salt and grind it to a coarse powder.

Take a pan boil milk and then add the ground powder mix well. Keep stringing till you get the thick paste. Now the Ulundhorai mix is Ready.

STEP:3 MAKING ULUNDHORAI RICE Take a wide vessel and spread the cooked rice. Let it cool for 5 mins. Add a tsp of ghee and then add the Urad Dal mix and tempering. Gently mix so that the spice mix is nicely incorporated and coated well with the rice. Check the salt level and adjust according to your tastebuds.

ULUNDHORAI/ULUNDORAI IS THE SPICED URAD DAL RICE WHICH IS OFFERED TO THE LORD PERUMAL(EXACTLY MADAPALLI PRASADAM STYLE RECIPE). THIS RECIPE IS TRADITIONAL ULUNDHORAI RECIPE WITH NO SHORTCUTS USED. THE TASTE IS EXACTLY WHAT WE GET IN TEMPLE.

Ingredients
  • FOR TEMPERING
  • 1 tbsp Ghee or coconut oil
  • 2 Red Chili
  • Few Curry Leaves
  • 10 Cashew nuts
  • FOR SPICE POWDER
  • 3 tbsp Urad Dal(we can also use black urad dal)
  • 2 Red Chili
  • Few Curry Leaves
  • 2 tbsp grated coconut
  • 2 tsp salt
  • OTHER INGREDIENTS
  • 2 cups Cooked Rice
  • 1 TSP GHEE
Instructions

Notes
do not burn the ingredients while frying.
the ulundhorai mix what we prepared should be consumed on the same day itself because we have added milk we can't store it for later.
if still, you want to store then skip the step of boiling the spice powder with the milk, just add the spice powder directly with the rice and the tempering+ghee serve.
