A reader commented on Thai Fried Rice Recipe that she wants to learn to make Thai Sticky Rice.  This post is all about sticky and how to make Mango Sticky rice. This is the Mango Season Instead making usual mango recipe do try this delicious coconut flavored Easy Thai Sticky Rice.

What is a Sticky Rice? A sticky is a Glutinous rice (which it does not) which is sticky and glossy in texture and very tasty rice. Mango sticky rice is a Thai dessert made with sticky rice and mangoes. There are 2 types of coconut sauces we are going to prepare one is the sweet coconut sauce for sticky rice and another one is thick coconut sauce(coconut cream) for topping.

Step: 1 How to make Sticky Rice,

Take Thai sticky rice soak it for 1 hour, wash and rinse it thoroughly. Steam the rice in a steamer or cook it in an electric cooker. Once the rice steamed well and become soft remove it and transfer it to a bowl and keep aside.

Step: 2  How to make Coconut sauce for the Sticky Rice,

Take coconut milk in a saucepan, add sugar and a pinch salt. Add pandan leaves or a drop of pandan essence. Don’t boil the coconut milk for long just the sugar combines remove it from the stove. drop hot coconut sauce over the steamed sticky and let the rice to absorb the coconut milk. Now the Thai Coconut rice is ready we need to prepare the Topping Sauce.

Step: 3 Thick Coconut Cream for Topping,

Add coconut milk to the saucepan(we can use the same pan). Add a pinch salt. In a small bowl take a tsp of corn flour and a tbsp of water, mix well and add it to the coconut sauce mix well. Once the sauce becomes thicken, remove it from the stove and keep aside.

Step:5 How to Serve Mango Sticky rice on your plate

Take a cup and fill the rice and drop the rice in the plate, slice the mangoes thinly and arrange it in the plate. Drop the coconut topping sauce over the rice and serve cold or hot as per your wish. I Love to taste cold mango sticky rice.

Ingredients
  • to make sticky rice:
  • 1 cup sticky rice
  • 2 cups water(steaming)
  • sliced mangoes
  • For the first coconut sauce:
  • 1 cup coconut milk
  • a pinch salt
  • ⅓ cup sugar
  • a drop pandan essence or 2-inch pandan leaves
  • For coconut cream topping:
  • 1 cup coconut milk
  • a pinch salt
  • 1 tsp corn flour
  • 1 tbsp water

Notes
1. we can add roasted mung or sesame on top of rice while serving I skipped.
2. adjust the sugar level according to your taste buds
3. don't cook the coconut milk for long it may become cuddle.
4. either you can steam the rice or cook in electric cooker, I prefer steaming the rice.
