Ugadi Pachadi Recipe

Ugadi Pachadi Recipe or Ugadi Pachadi shadruchulu is the famous Andhra dish. People make Ugadi Pachadi recipe during the Telugu New year day. The 6 tastes Ugadi Pachadi has symbolised the 6 emotions of the life. The Ugadi Pachadi is made of new neem flower(vepa puvvu), new jaggery(bellam), new chilli/pepper(karam), salt(uppu),tamarind(cintapandu), mango(mamidi) are the 6 main ingredients used. As per Telugu calendar, Ugadi is celebrated on Wednesday, March 29 Gudi Padwa 2017 in India. Happy Ugadi to you all.

The 6 Tastes of Ugadi

The six tastes of Ugadi are Tamarind(disgust), Raw Mango (surprise), Neem (sadness), Jaggery (happiness), Green Chilli (anger), Salt(fear) signifies the 6 emotions.

Do check the Mango Pachadi recipe which is a no neem flower version. Actually, I wanted to try this last year itself. I have seen a video of making Ugadi Pachadi for last Ugadi got tempted and tried it today. Really the taste was the awesome addition of coconut makes the dish rich and elegant. The method of Making the Ugadi Pachadi recipe is not same for all the people. According to their family procedure, they will change the ingredients or the method. Before trying the post I double checked with my friend Nageshwari and then made so please check with your elder people for the procedure and then make it. This is my way of making the Ugadi Pachadi. Okay, Let’s move on to the recipe.

Step by Step Ugadi Pachadi Recipe with pictures,

Ugadi Pachadi Recipe with Jaggery, Tamarind, green chilli

Soak the tamarind in 1/2 cup warm water and extract the juice. Grate the jaggery or you can powder it in mixie also. Dissolve it in 1 cup water and filter the impurities using the strainer. Take the neem flowers, separate the flower from the sprigs. Add it in a bowl.

Ugadi Pachadi Recipe with Mango, Salt and neem flower

Take a wide bowl add the tamarind extract, jaggery water, chopped raw mango, neem flower, chopped green chilli or chilli powder or pepper powder, and salt. Other than these ingredients we can add ripe banana chunks, fried gram(putnalu), chopped cashews, raisins, coconut etc. are optional according to your procedure you can add it.

Ingredients
  • A generous pinch neem flower(vepa puvvu),
  • 3 tbsp new jaggery(bellam),
  • 1 tsp chopped chilli/pepper(karam),
  • ⅓ tsp salt(uppu),
  • 1lemon sized tamarind(cintapandu),
  • ½ mango(mamidi) chopped
Instructions
  1. Soak the tamarind in ½ cup warm water and extract the juice. Grate the jaggery or you can powder it in mixie also.
  2. Dissolve it in 1 cup water and filter the impurities using the strainer. Take the neem flowers, separate the flower from the sprigs. Add it in a bowl.
  3. Take a wide bowl add the tamarind extract, jaggery water, chopped raw mango, neem flower, chopped green chilli or chilli powder or pepper powder, and salt.

Notes
You can use chilli powder or pepper powder for karam
If you didn't get fresh neem leaves you can use dried ones which is available in grocery stores.
