Ragi Semiya Kesari

South Indian vermicelli Kesari or Semiya Kesari recipe is the easy and quick sweet, that you can make for your surprise guest. We can call it as vermicelli halwa, usually people make Kesari in rava or normally vermicelli but this Kesari made of ragi vermicelli or ragi semiya which is more healthier than the normal one and you can serve a healthy sweet for your guest. It’s really interesting that am writing this post from Kuala Lumpur but clicked this pic long back, Yes we are going to move from Singapore soon. Hopefully, i will blog regularly once i settled in Kl.

You might think the dark colour of the kesari looks odd? but usual kesari colour is orange, colour doesn’t matter if the taste is good and also it is good for health.

I made this kesari using the roasted ragi vermicelli which is readily available in stores. It cooks very fast and no need add more water. If didn’t get the roasted semiya then use the normal semiya but roast it in ghee before use so that you will get the best texture and taste.

if you don’t want to use any synthetic colors in food, you can add saffron or kesar to give the color tones. saffron will give yellow tones and not orange. apart from that it gives a nice flavor and aroma to the Kesari. if you want orange tones, then add orange food color. Here I have used a drop of orange colour.

lets begin the step by step ragi Kesari recipe:

Semiya Kesari

Add ghee in a pan and fry the cashews and raisins, once it turns golden brown take it out in a plate. Roast the ragi semiya in the same pan if you are not using the roasted semiya. Now in a  non-stick pan,make the sugar syrup by boiling the sugar and water.once the sugar started thick add the food colour, cardamom powder and mix well.

Now add the vermicelli, cover and cook till the semiya becomes soft. Add the ghee and cover the Kesari with lid for a while so that we will get nice Kesari consistency.Once done add the cashews and raisins mix well. serve hot Kesari.

Ingredients
  • 1 cup vermicelli semiya(I used thin roasted variety)
  • 1 cup Sugar
  • 10 Cashews
  • 10 Raisins
  • 3 tsp Ghee
  • 1 cup Water
  • A Pinch cardamom powder
  • A small pinch Orange Food Color
Instructions
  1. Add ghee in a pan and fry the cashews and raisins, once it turns golden brown take it out in a plate. Roast the ragi semiya in the same pan if you are not using the roasted semiya. Notes
1. Water level is very important so add little water and then make the sugar syrup.If you add more water then you will not get the kesari consistency.
