Traditional Chakka Pradhaman Recipe with Chakka Varatti | Jackfruit (Chakka) Payasam

Chakka Pradhaman is the traditional payasam or kheer  form kerela cusine ,made of delicious Chakka Varatti or jackfruit jam/preserve. we had this payasam last year at my friend’s house.she made this  yummy kheer for Vishu .”Chakka” means jackfruit and Pradhaman means payasam or kheer.Now this is jackfruit season don’t miss to make this and also vishu is around the corner so decide your menu and enjoy!!! Hope this step by step method of making chakka pradhaman will help the beginners to learn in detail.

Once i decided to make this kheer immedietely wanted it to make it in the traditional way though it is bit time consuming but taste is 100% delicious so decided to make Chakka Varatti First and then made the chakka paradhaman using it.”varatti” means to cook by continuously stirring until the water in it goes.Chakka varatti is a traditional recipe in kerala. This is prepared in a heavy bottomed vessel known as Uruli ,this can store for long time if we refrigerate in fridge.

How to make chakka Varatti:

Ingredients:Chakka Varatti
2 cups jackfruit puree
1 cup jaggery grated
3 tbsp ghee

Method:
chakka paradhaman

  • Clean and deseed the jackfruit(Varikkyachakka),Cut to pieces and grind it to smooth paste in mixie.
  • Now heat jaggery along with 1/2 cup water to form syrup.Strain the syrup for impurities and keep boil it again.

Chakka Pradhman Recipe

  • Once the syrup becomes thick add in the jackfruit puree and mix well. Now add the ghee and mix well ,stir continuously till the ghee comes out at the top.Now the Chakka Varatti is ready to serve.

My Notes:

  • If you are using it for payasam then just stop just before the jammy stage .
  • If you are serving as perserve or jam you can roast the cashewnut in ghee and add it in the final state.

Ingredients:Chakka Pradhman
1 cup Chakka varatti
1 cup Coconut milk
1/2 cup Water
10 Cashew nuts
10 Raisins
1 tsp Ghee


Method:
Chakka Pradhman Recipe

  • Boil the water and then add a cup of chakka varatti and mix well. once the chakka vattri is started melting, add in the coconut milk and mix well.
  • If you didn’t add the cashew nut while making chakka varati you can roast it in ghe and add it now. Chakka parandhaman is ready to serve.

My Notes:

  • If you more sweet you can add while boiling the water.
