SWEET PONGAL RECIPES
Elaneer Sweet Pongal Recipe is not like normal pongal.Why don’t we try a different type of pongal for this pongal festival??? Try this elaneer sweet pongal .This is easier to prepare and it is more tastier too.
Tender coconut water (elaneer/nariyal pani) a natural, nutrient rich isotonic drink.Coconut water helps prevent dehydration and also relieves tiredness and fatigue by replenishing the natural salts lost by the body when you sweat.Coconut water is also a good alternative to caffeinated drinks, such as coffee, tea and colas.
Elaneer Pudding and Elaneer payasam is the one i usually make at home but for festive season i wanna try this,will post the elaneer payasam soon.

I bought this fresh sev elaneer and cant wait to make a post on it. Elaneer lot of varieties are there,today am using sev Elaneer(red coconut).

IngredientsSWEET PONGAL RECIPES
  • 1 cup Raw Rice
  • 1/3 cup Moong dal
  • 1 cup Tender coconut water
  • 1/2 cup Tender coconut(grinded)
  • 1/2 cup sugar
  • 2 tbsp Ghee
  • Cardamom powder a generous pinch
  • Pachakarpooram a pinch
  • 10 cashew nuts, cut into half pieces
  • 10 Raisins
  • 3 cup Water

Method:

  • Fry the cashew nuts and raisins in ghee,keep aside.

SWEET PONGAL RECIPES

  • Take out Tender coconut and water ,keep aside. Grind the tender coconut coarsely without water.
  • Cook the dal and rice with 3 cup normal water and 1 cup tender coconut water, till the rice becomes mushy.

SWEET PONGAL RECIPES

  • Once the rice cooked well,mash it with the ladle and then add in the grinded elaneer(tender coconut),sugar mix well.
  • Add in the pachakarporam,cardamom powder and fried cashews, raisins with the ghee, mix well.

My Notes:

  • Don’t grind the tender coconut into fine paste,cruchy taste of coconut gives wonderful taste to the pongal.
