Aloo Gobi Semi Dry Curry




I had Aloo gobi curry recently in a restaurant and liked it very much.So I wanted to give a try and got the recipe from Priti. This version is so simple and easy to make.So, here comes the recipe of aloo Gobi, 

Mushroom Soup Rasam



This soup not only assists in digestion,but also smells and tastes yummy!!!


I used tin mushrooms,you can use the fresh ones also.Fresh mushroom taste better than the tin ones.



If you are using the tin mushrooms,drain the water and then wash it.Slice it into thin pieces.


Ingredients:


100g Mushroom
1 inch Cinnamon stick
2 Cloves
1 medium sized onion,finely chopped 
1 medium sized tomato,finely chopped 
2 Green chillies
1 tsp Oil
1 cup Thick tamarind extract
1/2 tsp Ginger garlic paste
1 tsp Cumin powder
1/3 tsp Ajwain powder
1/2 tsp Pepper powder 
2 and 1/2 cups Water
Coriander for garnishing
Curry leaves 1 sprig
Salt to taste
      
Method of Preparation:



Heat oil in a kadai,add cinnamon stick and cloves.Once they crackle,add chopped onion ,curry leaves,chopped tomato and green chillies.Fry them in oil,till the onion and tomato become soft.




Once the onion and tomato becomes soft,add ginger garlic paste and sauté it for few minutes.Then throw in the sliced mushrooms.




Add the tamarind extract and water.Then add the turmeric powder,salt,cumin powder,ajwain powder and pepper powder.




Boil it till the rasam foams at the top.Garnish it with coriander leaves.





           Here it is ready.Adjust the Salt and pepper according to your taste.




                        Transfer it into a serving bowl and serve hot.

Sweet Pastry Pin Wheels



Remember my Fondant cake? On hubby birthday we had small party and made cheesy mushroom puff along with pizza.

I had some left over pastry sheet to use.While chatting i asked my friend to give me any recipe to use pastry sheet.  She quickly told me one of her favorite recipe which was new for me, after clearing my doubts with her I did tried it and loved it.  This recipe is so simple and yet delicious, a keeper for me.


Ingredients:

1 Pastry Sheet
1/2 cup Tutti fruity
2 tbsp nuts(i used almonds)
2 tbsp dessicated Coconut
A Pinch Cinnamon Powder

Method:
  • Pre heat the Oven at 180 degree c for 5 minutes.
  • You can use normal sugar,but brown sugar will give nice colour and yummy too.Chop the nuts and mix it with tutti fruity.

In  a mixing bowl,add all the ingredients and mix well.


Spread the mix at a corner of the pastry sheet or you can spread the mix every where through out the sheet.


                                                                             Roll it.


      Once done, Brush on top with butter/with egg whites and then bake at 180 degree Celsius  for about  15-20 minutes.


                                         Here is our Sweet Pastry Pin Wheels are ready.


                                                    Cut them into your desired size and serve.

Butter Cake with Fondant Frosting




  I wanted to make something special for hubby birthday.After lot of thinking, I decided to make fondant cake. I wanted to try fondant cake for very long time but was bit scare of the process.I got the recipe from my friend and tried my hands on it. As you can see I didn't get perfect frosting but then it's only my 1st trial, but the cake tasted yum that my hubby finished half of the cake :)You can also make cream or butter frosting instead of fondant for this cake.


Egg less Basic Butter Cake Recipe:


Ingredients:


250 gms Butter
220 gms Castor Sugar
1/2 tsp Salt
200gms Silken Tofu
280 gms Plain Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tbsp Milk Powder
50ml Warm Water


Method:



  • Preheat the oven and Grease the 9 inch baking tin.
  • Beat the Sugar,Butter and Salt,in a mixing bowl,till light and fluffy.


  • Cut the tofu into smaller pieces in a separate bowl.
  • Beat it well,till it become soft and fluffy.


  • Then mix the tofu mixture well with the butter mixture.
  • Shift the Plain flour,Baking Soda and Baking Powder and mix them well with the tofu,butter mixture.

 

  • Mix the Milk Powder with the warm water and then add it into the cake mixture.


  • Mix it well and transfer the batter to the greased baking tin.

  • Bake it for about 40-50mins.Check the cake by Inserting a tooth pick in the middle.If it comes out clean, the cake is ready.If not keep baking it for another 5 Min's.
  • Let the cake to cool down completely.Our Basic Butter cake is ready now.

Ingredients For Fondant:

 1 tbsp and 2 tsp of unflavoured Gelatin 
 1/4 cup cold water
 1/2 cup glucose
 1 tbsp glycerin
2 and 1/2 tbsp Vegetable Shortening
8 cups of confectionery sugar
Any colours of your choice(i used violet,yellow,orange)

For Decoration:

200gm Whipping Cream
1/4 cup icing sugar


Method:
  • Lets start our decoration,beat the whipping cream with icing sugar,till stiff beak.Layer the cake into two.Spread the cream evenly on one layer and  close the other layer over the cream layer.
  • Mix the gelatin with water and then double boil it.Add glycerin and glucose with the double boiled gelatin,mix well.You can add the colour if you want,but am going mix 3 colours.so am adding it later.
  • In a mixing bowl,add the confectionery sugar,double boiled gelatin + glycerin+glucose mix and vegetable shortening.kneed the flour,till soft dough.
  • I have separated 1/4 part of the dough for other decoration,keep aside.
  • Then i have added few drops of violet colour into it.Use confectionery sugar as dusting,while rolling the dough.
  • Here is our Fondant is ready for decoration.
  • Dust the work surface with confectionery sugar and then roll flat the fondant,using the rolling pin.
  • Take out rolled dough slowly over the rolling pin.
  • Cover the cake evenly without forming the air bubbles.
  • Cut the outer layer,using knife. Separate it out and keep it aside for making flowers.
  • Use the uncoloured fondant which we kept aside and make it as a small balls.Keep it at the side as borders for the cake.
  • Roll the dough which we have kept separately for making flowers and mix few drops of violet colour so that it appear more darker.Mix yellow colour and orange colour with the white fondant,separately.Using flower cutter,cut the flowers in different sizes,arrange it one above the other.In middle keep the small orange round ball.
  • Apply piping jelly behind the flowers and arrange the flowers on top of the cake.Complete the decoration by giving the same white ball borders on the top.
  • My daughter wants her contribution also in the cake.So i let her to write the wording for her father.

Akkaravadisal


Akkaravadisal  is hubby favorite sweet and this time I made this to celebrate Adi Velli and also hubby's birthday today.I baked a cake too for him which will post it later.Until then Happy Adi Velli and enjoy this Akkaravadisal.

Ingredients:

1 cup Raw Rice
1/4 cup Moong dal
2-3 Cardamom, Crushed
A pinch Pachakarpooram
1/2 tin Condensed Milk
2-3 Jaggery, crushed
20 Raisins
20 Cashewnuts,breaked into half
3 cups water,to cook rice
1/4 cup water,to dissolve the jaggery
4 tbsp Ghee








Method:


  • Wash the Rice and Dal in water and rinse the water.
  • Add the washed rice and dal,condensed milk and water in the pressure cooker and pressure cook it,till the rice and dal cooked well. 
  • Once the rice and dal cooked well,smash it using the ladle.
  • We have added the condensed milk in the previous step.So we are going to add less jaggery now.If you feel it is too sweet,you can skip this step also.Dissolve the crushed jaggery in water,stain the impurities and add it into the rice mixture. 
  • Heat the ghee in the kadai and fry the raisins and cashew nuts in it.
  • Add the fired cashew nuts and the raisins,pachakarpooram,crushed cardamom in the Akkaravadisal and mix well.

     Hot Akkaravadisal is ready now.You can add a tsp of ghee before serving.




                    You can offered this to god as Nevediyam.

Spicy Kurma


      One of the most favourite side dish with briyani is Veg Kurma.This kurma taste awesome and quite spicy.My daughter will not eat spicy briyani. So i always make it less spicy.To compensated it, i will make the  spicy side dish.This kurma goes well with Paratha and Idiyappam also.If you want less spicy Kurma Please check here.


Ingredients:

1/2 cauliflower break the florets into small pieces
1/2 carrot cut into small pieces
3 beans cut into small pieces
1 potato cut into small pieces
1/4 cup green peas
1 onion chopped
1 tomato chopped
2-3 green chillies
1 inch cinnamon stick
3-4 cloves
1 tbsp ginger garlic paste
1/2 tsp chilly powder
1 tsp coriander powder
1/4 tsp turmeric powder
1/2 cup soya chunks, soaked 
1 tbsp oil
salt to taste

To Grind:

1 cup grated coconut
1/2 tsp fennel seeds
5 cashew nuts/1 tbsp Roasted gram dal


Method of Preparation:


Heat the oil in a kadai,add cinnamon stick and cloves.Once it started cracking add onion,chilly and tomatoes and fry them for few minutes.If you don't want more spicy you can skip chilli here.Add the vegetables in the kadai.Cover and cook for few minutes/till the vegetables become soft.


Once the veggies are cooked well,add salt,turmeric powder,chilly powder and coriander powder. 


Grind the Roasted gram dal/cashew nuts,coconut and fennal seeds into a fine paste with enough water.


Finally add the Coconut paste and soaked soya chunk into it.If you want thin gravy you can add a cup of water at this stage and let it cook for few minutes.


Once the gravy becomes semi thick,you can remove it from the stove Or if you want thick gravy you can cook if for few more minutes and then remove it .



 Transfer it into a serving bowl.


Here is our Spicy Veg kurma is ready and i served with Veg briyani and gobi fry.
