Creamy Pumpkin Soup:
100 g pumpkin diced
1 medim sized potato diced
1 onion diced
10 ml thickened cream
1 tsp butter
salt and pepper as needed
Boil the pumpkin,potato and onion with 1/2 cup of water and salt in a presure cooker,until they become tender.
Grind them along with the water in mixie until it become smooth and a creamy paste and keep aside.
Heat the butter and add the paste,stir it nicely.
Switch of the stove and add the cream.serve it hot.(donot boil after adding cream)
Season to taste.
I love lot of pepper in this soup as it really compliments the pumpkin flavour .Serve with crusty bread.
