Vangi Bath:
Ingredients:
2 cup steamed rice.
3 tbsp oil
50g small onion chopped
100g brinjal diced into medium sized
1/2 tsp mustard seeds
salt to taste
To grind:
2 tsp toor dhal
11/4 tsp grated coconut
1 tsp corriender seeds
1/2 tsp peanut
1/4 tsp sesame seeds
a pinch hing powder
1/4 tsp turmeric powder
Method:
Fry the grinding ingredients with a tsp of oil and let it cool for sometime.
Heat the remaining oil in a kadai,add the mustard seeds.Once it crackles,add the chopped small onion and diced brinjal and curry leaves.Cover with lid and cook it for 5 mins.
Grind the grinding ingredients into fine powder.This is called the vangi bath powder.
Add the vangi bath powder into the kadai.Add salt and mix it well.Cook it for 2 mins,until the raw smell goes.
Once it cooked nicely,add the rice and mix it well.cover and cook it for another 2 mins.
You can smell the nice aroma of the bath while cooking.Stir it nicely and switch off the stove.Transfer vangi bath into a serving bowl.
It goes nicely with anything raitha/papad.I served it with vadavam,moormilagai and thair vadai.
