Soya Chunk Briyani:

Ingredients:

11/2 cup soya chunks, washed and soaked for 1/2 to 1 hour and drained
2 cup rice, cleaned and washed
31/2 cup water
1 onion chopped
1 tomato chopped
1 inch cinnamon stick
3-4 cloves
2 bay leaves
2 cardamom
1 tsp turmetic powder
2 tsp ginger garlic paste
1 tsp chilli powder
11/2 cup mixed vegies(carrot, beans, peas)i used frozen vegies.
salt to taste.

To grind:

1 onion cut into medium sliced
2 tomatoes
3 green chilies
1 tsp fenugreek seeds

Method:

Grind the ingredients and keep aside.

Meanwhile heat the oil in the kadai,i used this briyani kadai. This is non-stick briyani kadai.

Add the cinnamon stick, cloves, cardamom and bay leaves.Once it started crackle add the chopped onion and tomatoes and fry them in the oil and add gingergarlic paste, grinded paste and soya chunks.Cook it for 3 mins so that the soya chunk absorb all the flavours nicely.

Add veggies, turmeric, salt and chilli powder.Cover and cook it for 2 mins.

Add rice and mix well. Then add water, cover and cook for 10 mins.

Open the cover and see all the soya chunks comes up and rice also cooked nicely

Takeout the soya chunks, add the food colour with little bit water and add it in the briyani rice.

Then again add the soya chunks.Mix the rice gently, so as not to break rice and transfer it  into a serving bowl.

                              Serve hot with Raita.

Enjoy Cooking!!! And Happy Weekend:)
