Aviyal:
Ingredients:
1 carrot
5 beans
1 drumstick
1 brinjal
50 g wintermelon
2 tbsp coconut oil
1/2 tsp mustard seeds
1 sprig curry leaves
2 tbsp fresh curd
For grinding:
1 cup grated coconut
2 green chillies
Method:
Grind the grated coconut and green chillies into fine paste.
Cut all the vegetables in length wise and half cook the vegetables with water in microwave for about 2 mins.
Meanwhile heat the oil in a kadai , add the mustard seeds.Once it crackle,add the curry leaves.
Add the boiled vegetables into the kadai
Add the grinded coconut paste and salt into it.cook it for 5 mins in medium heat.
Finely add the curd and mix it well.Cook it for 2 mins and switch off the stove.
Transfer it in a serving bowl.It is an excellent combination with adai.

ReplyDeleteHi ..I am from north and in Delhi I have hardly seen people eating this.Now i m un HYderabad people eat it readily and I was thinking for a recipe to make avial...will try it out.it is so healthy too:)

ReplyDeleteAvial looks really good. We make it slightly different. No tempering and adding some souring agent like, curd, raw mango or tamarind.
