Tomato Rice

This is a simple and easy version of tomato rice.This is one of my husband’s

favourite lunch box meal.Am not going to add any chilly into it because it is specially for kids.So that we can pack this for our kids too.
Ingredients:
3  Tomatoes chopped
1 onion Chopped 
1 Cinnamon stick
4 Cloves
2 tsp Oil
2 cups Basmati Rice
1 tbsp Ghee
4 cups Water
1/2 tsp Sambar Powder
1/2 tsp Fenugreek seeds
Few Curry leaves
A pinch food red colour(optional)
2 Garlic cloves chopped
Few Coriander leaves for garnishing

Method of Preparation:

Heat the oil and temper the fenugreek seeds,curry leaves.Then add the cinnamon sticks,cloves.Let it crackle.Once it done add the chopped onion,garlic and tomatoes.Saute them well.


Add sambar powder,turmeric powder,pinch red colour and salt.Cover and cook for few minutes until it become thick gravy.

                        Add the rice and ghee in the gravy and mix well.Let it for few minutes in low flame.
Transfer the rice into electric cooker and add water.Cook it well.
Check whether the rice is cooked or not.
                                Garnish the rice with coriander leaves and serve it with raita.

    the pic of tomato rice is so so irresistible – i just made this – with some spinach n peas to camouflage it for my kids…….will blog this too later………its awesome.!!
